Unlike any other winemaking process, creating Champagnes is extremely labor-intensive – it requires two fermentations. In the second fermentation, sugar and yeast are added to create alcohol and CO2, which are the bubbles. Furthermore, to remove yeast in the bottle and produce clear Champagne, a process called riddling is required to have clear Champagne.
